For the longest time, my family celebrated St. Patrick’s Day with a feast of corned beef and cabbage. I’ve been trying to reduce my intake of red meat so this year I chose to make a really simple and flavorful cabbage soup in the spirit of the holiday.
With the exceptionally cold nights we’ve been having, nothing could be more satisfying than a warm medley of goodness. This recipe began as a simple split pea soup and turned into a gratifying thick and hearty stew.
I visited a new market recently that had a huge selection of beautiful produce. When I returned home I was excited to try a recipe I found in order to use the fresh veggies I picked up! Continue reading

Hi there, it’s Jesly! I’m back, guest blogging about another recipe that my entire family loves! I found this on allrecipes.com a while ago and make this soup at least once or twice a month. Not only is it great for dinner, but it’s perfect for lunch as well. I was inspired to make it the other day due to the freezing weather we’ve been having.
The lower the temperature drops outside, the more of a reason I have to give in to my soup obsession. There’s nothing better than warming up with a large bowl of tasty goodness on a wintry day, especially when the soup is thick and rich like this one! Continue reading
A few years ago my aunt served a delicious butternut squash soup during our Thanksgiving feast. I recalled her saying that it was a hassle to put together so I never attempted making it myself. Well, that was until I found this particular recipe. Continue reading

One of my new friends is a vegetarian and I wanted to try and find new dishes suitable for her diet when she joined my sister at our house for dinner over the weekend. We had a fantastic weekend at the beach celebrating TJ’s birthday. I received so many excellent suggestions…one in particular was for watermelon gazpacho! Continue reading

Definitely one of my new staple side dishes for the Spring/Summer! Continue reading
I appreciate salads that have unique and memorable flavors such as the Waldorf salad with its blend of grapes, apples & walnuts. This asparagus chicken salad certainly ranks up there because of its remarkable sweet and nutty taste. I think I was especially roped in by the Dole Pineapple Chunks.
My aunt asked me to make a pasta salad for our family Memorial Day BBQ to accompany everything that she’ll be grilling. One of my friends suggested pasta with Italian salad dressing, olives, tomatoes, etc. which sounded great. With that in mind, I came across this Greek pasta salad recipe that tied in some components of what my friend recommended along with a homemade fresh herb dressing. Continue reading
Creamy soups are delicious. However most of them are lactose-based and since I’m lactose intolerant…well that’s a problem. However, I adapted this recipe so that I could enjoy it as well! Continue reading
